Instant yeast for high sugar dough, to be added directly to the flour during mixing. The dosage depends on application, recipe, type of process and process circumstances. Also available in Blue but Bruggeman Brown yeast is more appropriate for sweet doughs containing a lot of sugar (5 to 30% or even more) (e.g.: croissants, etc.).
