Spelt is an ancient whole grain that can be a nutritious addition to your diet. However, it contains gluten, and it's not clear whether there is any benefit to consuming spelt over wheat: nutritionally similar to wheat, spelt flour tends to be slightly higher in zinc and protein. About 80% of the protein in spelt is gluten. In comparison to wheat, spelt has a higher antioxidant capacity (ability to remove free radicals)
